of traditional dishes. Here are some popular and simple ways to include millet in Indian cuisine:
- Millet Upma
- Ingredients: Foxtail millet (or any preferred millet), vegetables (carrots, peas, beans), mustard
seeds, urad dal, curry leaves, ginger, green chilies, and lemon juice. - Preparation: Cook the millet separately and set aside. In a pan, sauté mustard seeds, urad dal,
curry leaves, ginger, and green chilies. Add vegetables and cook until tender. Mix in the cooked
millet and add lemon juice for flavor.
- Millet Khichdi
- Ingredients: Barnyard millet, moong dal, vegetables (potatoes, peas, carrots), cumin seeds,
turmeric powder, and ghee. - Preparation: Cook millet and moong dal together in a pressure cooker with vegetables and
spices. Temper with cumin seeds and ghee for added flavor.
- Millet Dosa
- Ingredients: Pearl millet (bajra) or finger millet (ragi), rice, urad dal, fenugreek seeds.
- Preparation: Soak millet, rice, urad dal, and fenugreek seeds. Grind to a smooth batter, ferment
overnight, and make dosas on a hot griddle.
- Millet Pulao
