India is following the Western model of living. Food choices, such as meat, chicken, and soy bean contain hormones and antibiotics that negatively impact us. We must consume food that provides health benefits.
Millet is a food that provides fiber and the glucose contained in the millet will release slowly and steadily into our body. This allows our bodies to effectively process the glucose. Millet also has proteins, minerals and vitamins. It is believed that various types of millet support the body in resolving imbalances and dis-ease. Dr.Khadar suggests that we should eat millet to improve our health. “Instead of doing business of medicines do the business of millets.”

Dr. Khadar Valli is a native of Andhra Pradesh, India. After graduating with a Masters in Science (with specialization in Education) from the Regional Institute of Education, Mysuru, he completed his PhD on steroids from the Indian Institute of Sciences, Bengaluru. His post doctoral research was on environmental science at Beaverton, Oregon, United States of America. His research was on deactivating deadly chemical substances such as Agent Orange and Dioxins. He returned to India and settled down in Mysuru. For more than 20 years he has researched five different types of millets and developed diet plans using millets to resolve
a variety of health issues. He is known as the “Millet Man of India”.
The following is an edited version of a presentation that Dr. Khadar made on health and the benefits of millets.
In the name of development, science and economics the world has taken a wrong turn in maintaining the essence of life.

Nowadays the health industry has become business oriented.
Take the example of diabetes. Diabetes is caused because of increased glucose (sugar) content in our blood. We just test our glucose level and inject insulin. But it is not a correct solution.
The correct solution is for our body to have the enough health to fight these diseases.
Day by day hospitals and medical stores are increasing all over our world but it is not a healthy society.
Ideally, food should release glucose steadily and slowly in the body. Glucose (energy) is
needed for our body for various purposes and the glucose that gets into our bodies should get
burnt by doing work. Since people are not doing enough work (exercise), the glucose content
in the blood increases and it turns into major diseases like diabetics.
The food we eat these days does not provide much control in glucose release. We should eat
food that slowly releases glucose into our blood.
We should work (exercise) for 15 minutes to burn 1 gram of glucose, but no one these days is
ready to work. When the glucose gets accumulated in the body, the thirst of the person
increases and we have to consume more and more water which may damage the functioning
of the kidneys.
Meat, chicken, and soybeans contains lot of steroids that can completely imbalance our
system. 100 grams of egg contains 8 times more chemicals than 1 kg of vegetables.
We must change our food culture. There are solutions for these problems.
Fibers are of two types: soluble fiber and non-soluble. Soluble fiber dissolves in the blood and
cleans up all our systems. Non-soluble fiber gets into the large intestine which absorbs
nutrients that our bodies need..
There are positive grains, negative and neutral grains. Positive grains have high fiber content.
Examples of these grains are Browntop, Foxtail, Kodo, Little Millet and Barnyard Millet.
Foxtail millet contains 8.0% fiber and 60.6 carbohydrate, Barnyard millet has 9.8 % fiber and
65.5 carbohydrate, Kodo millet has 9.0 % fiber and 65.6 % carbohydrate, Little millet has
9.8% fiber and 65.5 % carbohydrate. All these have a fiber to carbohydrate ratio below 10,
which is good for health.
Neutral grains such as Pearl Millet and Sorghum have the capacity to maintain health but not
to cure diseases. The negative grains that we consume daily are wheat, paddy rice, etc… that
have no fiber content. These will invite many diseases day by day
Millets are a grain enriched with fiber.
The millet fiber is arranged into layers. As a result, the glucose contained in the millet will
release slowly and steadily into our body.
Examples of these grains are Browntop, Foxtail, Kodo, Little Millet and Barnyard Millet.

Browntop millet is an example of millet grain found in America. It contains 12.5 % fiber and
69.7% carbohydrate. When we eat one hundred grams of browntop millet it takes 8 hours to
release the glucose into our blood.
Different millets have different purposes:
Foxtail millet- cleans up the nervous system
Kodo millet- cleans up the blood and bone marrow
Barnyard millet – good for brain and liver
Browntop millet- good for every part specially for digestive system.
Pearl millet- good for digestion and heart
This can reverse our disease culture. Some advocates claim that these foods can have a
positive impact on cancer, brain tumors, epilepsy and paralysis like diseases.
How to Cook Millet
First, the millet grain should soak for 6 to 8 hours to release the fiber not like 2 minutes
noodles and then we can cook it for 5 to 10 minutes.
Conclusion
We should learn from the tribals, who produce millet, to find a better solution to our health.
If millet is not grown, there is no seed germination and we will lose the most precious grain…
millet which has enough fiber content to prevent diseases.
If you want healthy babies, we should try to eat millets. Within 6 weeks we can feel the
change. Each one of us should try to change our food style. Thus, we can change our food
system.
Instead of doing the business of medicines, do the business of millets.
