Delicious Gluten Free Bread

Many people are choosing to eat gluten free food.  The following recipe uses a blend of gluten free flours to create a delicious bread.  The flours can be blended in advance and

used in a variety of baking projects.  This recipe can also be modified by choosing a low glycemic sugar.

Ingredients:

1 ¼ cup water

¼ cup oil or 4 tbsp dairy free butter, melted

3 eggs, lightly beaten

1 ¼ tsp salt

3 tbsp honey or sugar

3 ¼ cup baking flour blend *

2 tsp active dry yeast

Instructions

  1. Whisk together water and yeast in a small bowl. Allow to stand for five minutes.
  2. In the bowl of a stand mixer, combine dry ingredients (flour, salt, sugar). Whisk to combine. Add the yeast mixture, eggs, and oil  Mix on medium speed until smooth, about 3 minutes. 
  3. Oil an 8-1/2″ by 4-1/2″ by 2-3/4″ loaf pan and put dough evenly into pan. Cover with plastic wrap or a dishtowel and put it in a warm place to rise.  It should double in size in about an hour.
  4. Preheat oven to 350 F. Bake bread for approximately 45 minutes.  Test for dryness with a tooth pick.
  5. Remove bread from the oven and allow to cool for several minutes. Transfer bread to a wire cooling rack to cool completely.
  6. Cut bread with a serrated knife.
  7. Store bread at room temperature, or freeze.

Flour Ingredients:  2 1/2 cups White or Brown Rice Flour,  1 cup Millet Flour, 1 cup Tapioca Flour, 1/4 cup Corn Starch,  1/4 cup Garbanzo Bean Flour,  2 Tbsp Xanthan Gum or 1 Tbsp flax seed soaked in water.

 

Variations:  Add spices, banana or dried fruit and nuts for a sweet bread or other spices and herbs for a savory bread.
