Gluten Free Upma

A Healthy Breakfast/Dinner Recipe

Ingredients

 

1 medium sized onion

1 green chile

8-9 curry leaves

1/2 tsp mustard seeds

1 small piece of fresh ginger grated

1 medium sized carrot diced

1 medium beetroot diced

½ cup green beans

1 tsp Himalayan salt

2 tbsp oil

1 1/2 cups little millet

2 1/2 cups water

½ cup grated coconut

Instructions

  1. Rinse the millet and soak in water for 7-8 hrs.
  2. In a kadai add oil and mustard seed and let them splutter. To this add chopped green chillies, grated ginger and curry leaves.

Saute for few seconds and then add chopped onions; saute till the onion turns slightly brown.

  1. Add finely chopped mixed vegetables including carrot beans and beetroot. Saute for 2-3 minutes until the vegetables are             tender.
  1. Add water to the mix and bring it to boil.
  1. Drain the soaked millet and add this to the boiling water. Mix in well  Add salt to taste.
  1. Cover the kadai with a lid and simmer on low flame until the millet is cooked.

Add  grated coconut as a topping and serve hot.
