Gluten Free Upma A Healthy Breakfast/Dinner Recipe Ingredients 1 medium sized onion1 green chile8-9 curry leaves1/2 tsp mustard seeds1 small piece of fresh ginger grated1 medium sized carrot diced1 medium beetroot diced½ cup green beans1 tsp Himalayan salt2 tbsp oil1 1/2 cups little millet2 1/2 cups water½ cup grated coconut InstructionsRinse the millet and soak in water for 7-8 hrs.In a kadai add oil and mustard seed and let them splutter. To this add chopped green chillies, grated ginger and curry leaves.Saute for few seconds and then add chopped onions; saute till the onion turns slightly brown.Add finely chopped mixed vegetables including carrot beans and beetroot. Saute for 2-3 minutes until the vegetables are tender.Add water to the mix and bring it to boil.Drain the soaked millet and add this to the boiling water. Mix in well Add salt to taste.Cover the kadai with a lid and simmer on low flame until the millet is cooked.Add grated coconut as a topping and serve hot.
